IRISH POTATO and EGG RECIPE


IRISH POTATO and EGG 



5-8 Servings

Ingredients

Onions & green onions

You'll need:
1 1/2 pounds of diced/chopped Irish potato
5 eggs
Seasoning: Onions & green onions
Salt (to taste)

Break the eggs in a bowl add salt ( a pinch) and whisk well

Add a little oil into the frying pan and place the diced/chopped potatoes. Stir at intervals (to prevent it from burning )

Add in the seasoning (onions and green onions) and salt; When the potato is almost ready

When the potato is done/ready add the eggs.

Serve with Rice or bread.
